Refreshing Strawberry Basil Lemonade Smoothie

A refreshing drink for a summer afternoon, this strawberry basil lemonade smoothie can be enjoyed in so many ways — as a smoothie, a mocktail, a cocktail (just add the booze), or even as popsicles!

We’re on a major smoothie kick this summer. As I mentioned in my post about the blueberry peach zucchini smoothie, it’s been a go-to afternoon snack for my toddler and me. Because I like variety and I want to continue to introduce him to lots of different flavors and foods, we are always trying something new.

This strawberry basil lemonade smoothie is basically like a strawberry lemonade slushy (remember those?). It’s sweet with a hint of tart. The basil adds a fresh summery flavor that pairs so well with the sweet strawberries. Because I want my smoothies to have some staying power, I always add a source of protein and healthy fat. In this case, it comes in the form of chia seeds — which are like little super seeds packed with both. A drink for all occasions

Now, if you’re thinking: this looks like it would be a delicious cocktail, you’re absolutely right! Just add some vodka or rum and you basically have a healthy strawberry daiquiri. For those of you not imbibing, it’s the perfect mocktail for an evening when you want a little something special.

Make strawberry basil lemonade popsicles

This smoothie also makes great popsicles. I make a little extra and then put them into my favorite silicon popsicle molds. Since this smoothie is on the sweeter side, it’s kind of perfect for popsicles, but with no sugar added!

Refreshing Strawberry Basil Lemonade Smoothie

A super refreshing summer drink, this strawberry basil lemonade smoothie can also be a mocktail, turned into a cocktail, or made into popsicles. So many possibilities!

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 1 cup frozen strawberries (about 8-9 medium berries)
  • 3/4 cup coconut water
  • 2 tsp chia seeds
  • Juice of 1/2 a lemon
  • 2-4 basil leaves depending on how much basil flavor you want

Instructions

  1. Add all ingredients to a high speed blender and blend until smooth.

Notes

Make a cocktail: To make into a cocktail add 1 oz of vodka or rum to blender. Top with a strawberry and/or a few basil leaves.

Make popsicles: Pour smoothie mix into popsicle molds and freeze overnight.
